Our Saturday Lunch

Lunch yesterday was a veggie sandwich consisting of healthy-sauteéd' (in vegetable broth) Portobello Mushrooms with Japanese Eggplant & onions, on a bed of Romaine Lettuce & fresh cucumber slabs, under sliced tomato & Mung Bean sprouts, all stacked between two slices of Food For Life 100% Whole Grain Ezekiel 4:9 Flourless Bread, lathered on one side with home-made hummus, and on the other, with Follow Your Heart Grapeseed Oil Vegenaise.

We create variations on this theme several days a week, sometimes with avocado and a slice of cheddar, but always making a superb tasting sandwich!

By my best reckoning, this absolutely cholesterol free sandwich, including the hummus and Vegenaise, provides about 290 calories, maybe 75 of them from fat (derived mostly from healthful essential fatty acids). But that's not the reason to eat this thing, the reason is because it tastes so danged good!!!

While I'm on the subject of food, I should, once again, recommend our bible on healthy eating, 'The World's Healthiest Foods', by George Mateljan.

Thanks for the book tip, I'll check it out.

The issue of the worlds healthiest foods is important - but now we have to equally be attentive to the soil in which the food is actually grown. Agribusiness is interested in putting a seed in, nuking any critter that will decrease yield, add water and sunlight, and presto magico they have bruise proof, brightly colored food that can be transported to the local supermarkets.

But wait, they are interested in taking from the earth, and not replenishing it. Good short term strategy for financial gain. Lousy strategy for most everything else.

The Nearings talked about the importance of replenishing the soil back in the 30's and I'm sure there were many others. There is a wonderful resurgence of that throughout the "organic" community.

Really enjoy reading and seeing your lifesyle.

We have an acre field behind our house that was used for ponies and sheep - recently down to just one sheep as a lawnmower.

My daughter and her fiancé have re-fenced the field into smaller plots and are growing pigs and vegetables(to Soil Association organic standards) so that they can
feed themselves throughout the year.

Ive just turned vegetarian - or a "meat reducer" to begin with.

But we are very lucky in Dorset that we have so many small farmers producing organic food and selling through Farmers' Markets. No food miles!
